Quorn Meat-Free Taco Bowl

Ingredients
Salsa Roja
- 300g tomatoes, about 3 medium-sized
- 100g white onion, about half of large
- ½ cup red bell pepper, sliced
- 4 cloves garlic
- ½ cup olive oil
- 1 tbsp. red wine vinegar
- 1 piece siling labuyo (optional)
Quorn Meat Filling
- 400g Quorn Meat Free Mince
- ½ cup carrot, shredded
- 1 cup white onion, diced
- 2 tbsp. taco seasoning
- 2 tsp. cumin, optional
- 2 tbsp. lime juice
- 4 tbsp. cooking oil
Taco
- 6 pieces crispy taco bowls
- 2 cups romaine lettuce, shredded
- 1 cup cheddar cheese, shredded
- 1 cup white onion, diced
- ½ cup cilantro leaves, picked and washed
Method
For the Salsa Roja
- Char the tomatoes, bell pepper, garlic, and chili over an open flame, or place them under a broiler until slightly blackened and softened.
- Place all the vegetables and all of the remaining ingredients in a blender. Blend until smooth.
For the Quorn meat filling
- Set a pan to medium heat. Add the oil.
- Add carrots and onion and cook until cooked through.
- Add the Quorn Mince and all of the remaining ingredients.
- Fry for about 10 minutes or until the Quorn is cooked through and golden brown. Set aside.
Assembling the taco
- Evenly divide shredded lettuce into the taco bowls.
- Top with Quorn meat filling, salsa roja, cheddar cheese, diced white onions, and cilantro leaves and serve
