Parmigiana Stuffed Peppers with Quorn Grounds

  • 200g Quorn Grounds
  • 4 red peppers, tops removed, seeds and veins removed and discarded
  • 1 large aubergine
  • 2 tbsp olive oil
  • 1 medium onion, finely diced
  • 2 cloves garlic, crushed
  • 250ml tomato passata
  • 200ml vegetable stock
  • 4 tbsp fresh basil, finely chopped
  • Salt and pepper to taste
  • 1 vegetarian Mozzarella ball, light or reduced fat, thinly sliced
  • 25g grated vegetarian Italian Style Hard Cheese
